Pinterest Challenge Week 24

I find Pinterest gives me a lot of ideas and motivation for things that I want to do to my house.  I love changing things up, organizing and cleaning.  Seriously vacuum lines on carpet make me very happy! 
 
One are in my house that has always been a major issue is the garage.  Just full of junk and garbage, really you could hardly even walk in it.  It would always put me in a foul mood when I went out there to get something from my second fridge.  So slowly since my ex moved out I have been de-cluttering, donating and selling items in my crazy garage. 
 
Unfortunately I didn't get a before picture, but trust me you couldn't walk around in it.  But I am happy to report that after looking at lots of different pins on garages and organizing I was able to get everything organized and up off the ground!  I now love walking out to the garage, its like another room in the house.  The bonus is when the weather is a little rainy we can still open up the door and play with all the toys in the garage.

Oh What A Day

Have you ever had one of those days that everything just seems to fall into place.  I had one the other week.  It was one of those days that I decided that I would not pay any attention to my to do lists or cleaning, what needed to be done or what was way overdo.  I just wanted to forget it all and have a day with my girls that was full of fun and laughter and memories. 
 
 
 
We laughed harder, smiled bigger and enjoyed every second just a little more then usual.  I announced that it was time for an adventure and Aisley and I grabbed Quinn early for school and we set out. 
 
I have this thing about fields,  I am constantly on the look out for a good field to run in.  I have dreams of owning property someday that has large open fields for us to run and play in.  As part of our adventure I knew that I had to find a large open space for us to run and play in.  Now this is harder then you may think to find.  All fields seem to be fenced in and have no trespassing signs all over them, so what is a Mama with a dream to do, I kept driving and knew that I would see a sign, I would find what I was looking for.  Then on one long stretch of road there is was, a sign, a for sale sign to be exact.  There was 5.5 beautiful open acres for sale, and that means it was there just for us.  I screeched to a halt, we all jumped out and in that field we ran, we played, we laughed and we made memories.

Sometimes you need a day like this, a day to reset, a day to remind you of what is really important.  It is easy for life to take over, to get caught up in the grind. Routines are great, my kids need them and I need them, I think they are important to stay sane and to make sure that your daily routine runs smoothly.  But I also think it is equally as important to have days that you take your routine and you crumple it in a ball and you do a happy little dance all over it.  You need to throw caution to the wind and just let the day happen, wherever it may take you soak it in and know that you are making memories; good, bad, beautiful or ugly.  Memories that are real and true and that will always hold a special place in my heart.  I will remember this day ... its the day we went on an adventure and found a perfect field to play in.  
 
And the bonus ... not only did we find that field to run in but then we finished the day off with ice cream and friends and another perfect little field behind the Dairy Queen to have a fantastically energy filled crazy as can be dance party.

Pinterest Challenge Week 22

This week I tried a few new things in my kitchen that I have been wanting to try.  I started with healthy chocolate chip bites and let me tell you they were a huge hit!  I actually had to make another batch 2 days later as they were eaten up so fast.  For my first batch I made them with brown sugar and for the second I made them with honey, both were amazing.  I am sure you have seen the link going around, it has been all over Pinterest and Facebook.  There is no flour, sugar, egg, butter or oil.  Healthy cookies that taste amazing!  Check out Serena Bakes Simply From Scratch Blog for the recipe. 
 
My eldest made a request for some home made pierogies, I have always wanted to try so I decided that her and I would do it together.  They were tricky and time consuming but I am happy with how they turned out.  Quinn put her finishing touches on each one so they are not the most professional looking pierogies but I think they are perfect.  I want to try making them again on my own so that I can get the hang of them and then I will make them again with my sweet little helper.  I used the recipe here and I made the Potato ones, check out Little Kitchen on the Prairie Blog for the full recipe.





 
We also took a trip to our local Fire station and made some lemon cookies for the firemen.  I am a sucker for lemon poppy seed so I found a recipe that looked good for lemon cookies and just added some poppy seeds to it.  Now I also rushed and made them without reading all the way through and I put the icing sugar right into the dough, which I found out after you are not supposed to do, but they turned out great either way.  I will have to make these ones again for sure.  Here is the Pin and Check out LDS Living for the entire recipe.

Lastly I have become obsessed with Quinoa I can't believe how yummy it is.  I love it plain, with sauce, with a lemon dressing, hot, cold, any which way. It really is an amazing food.  I haven't tried any exact recipe but here is my folder for what I have pinned.  To cook it I do 1 cup of Quinoa to 2 cups of water.  I bring it to a rolling boil on medium heat, then turn it down, cover it and let it simmer for about 17 minutes.  Remove from heat and let it sit for another 10.  1 cup of uncooked Quinoa makes about 3 cups cooked and a bonus is it keeps in the fridge really well.
